MetPro approved Taco Salad

Ingredients:

Black Beans
Ground Turkey
Lettuce shreds
Bell pepper
Onion
Cheddar cheese
Corn tortilla
Favorite salsa (no sugar) mine is Trader Joes medium fresh salsa (as dressing)

Directions:

1.) Cook up ground turkey with your favorite Mexican seasoning packet
2.) Spritz corn tortilla with Olive Oil to crisp it up, slice into small pieces to add to salad.
3.) Determine how many black beans/corn tortillas (Carb meal) you can use on your phase.
4.) Determine protein/fat amount needed
5.) Mix all ingredients together and enjoy!

Ground Turkey Patty

Ground Turkey Patty

I get a lot of questions about a good breakfast sausage that people can use; the answer is typically “you can’t” due to the fat content. Here is a wonderful make it yourself Turkey patty from Crystal Palmer! Enjoy!

Ingredients:
1 tsp Lemon Pepper
1 tsp Chili Powder
1 tsp Italian Seasoning mix
¼ tsp Garlic Powder
Diced Onions (as many as desired, just used for flavor)
1lb ground turkey meat

Directions:
1.) Mix all ingredients in a bowl .
2.) Form mixture into patties(about palm size)
3.) Turn stove on to medium/low heat and cook patties
4.) About 2-2.5 patties will be about 2oz (make sure to get that food scale out)
5.) ENJOY!

Denise's Turkey Meatballs with Sauce

 

Denise's Turkey Meatballs w/ Sauce

Ingredients:

Sauce: 
1 can of organic tomato sauce
2-3 garlic cloves minced
½ t. Oregano
½ t. Basil
½ t. Red pepper flakes 

Meatballs:

1lb of ground turkey
1 egg
4-6 tbsp dry Oats
½ medium yellow onion
2 garlic cloves
1t Montreal steak seasoning
½ red pepper flakes
½ t oregano
½ t basil
½ t garlic powder

Directions:

1.) Saute the onion until the onions are translucent (spritz pan to coat), add garlic and cook another 2 mins. Put in bowl to cool.
2.) When onion mix has cooled add turkey, egg, oats, and seasonings to bowl and mix.
3.) Create meatballs using hands, add a little more olive oil to pan (Fat serving here) add meatballs to pan and cook until both sides are brown. Cover and continue to cook about 10 more minutes
4.) For sauce: add all ingredients to a sauce pan, stir and heat over low heat while making meatballs.
5.) Add sauce to meatballs and ENJOY!!

Taco Smash

Ingredients/Shopping list:
Ground turkey
Sweet Potato
Lettuce shreds
Red Bell pepper
Avocado
Salsa of choice

Directions:
1. Bake the sweet potato at 400 for 45mins-1 hour (varies depending on size).
2. Cook the ground turkey meat. Season with favorite Mexican seasoning.
   Mine (for 1lb of turkey, double for 2lbs etc):
• 1 ½ tsp. ground cumin, 1 tsp Chili powder, 1 tsp paprika, 1 tsp onion powder, ½ tsp salt, ½ pepper, ¼ cayenne pepper.
3. Peel and mash the sweet potato (no butter or oil needed). Slice bell pepper, slice avocado.
4. Using your food scale. Put your phase appropriate amount of sweet potato on plate (carb meal), then the phase appropriate amount of ground turkey (protein), add the lettuce shreds (free), avocado (fat), bell pepper on the side (carb veggie) and the salsa on top (free).
5. ENJOY! This is one of my favorite meals! : )
